Burllingame, California has a new restaurant dedicated to the art of the nacho.

From the Eater article above, unlike the typical American-style nachos loaded with refried beans, sour cream, guacamole, pico de gallo and jalapenos, Nachoria’s nachos are simpler with just housemade cheese sauce, fire-roasted red peppers, caramelized onions, scallions and queso fresco.
