
Are nachos made on tater tots a thing now? Atlas Obscure does a deep dive into totcho culture.

The Nachojawns had family taco night, and I had picked up a bag of chips from my favorite tortilleria, San Roman. I can’t say enough good things about San Roman. Please, please, try their tortillas or chips. They are a game changer.

Nachojawn Jr. whipped up some nachos with Daiya mozzarella shreds. Being dairy free doesn’t mean you have to be nacho-free.

I went with the seasoned ground beef, pico de gallo from San Roman, spicy pineapple salsa and guacamole from Whole Foods, salsa verde (spicy) from San Roman, and refried beans. They were dope.
And that’s a Nachojawn Margarita in the background. They’ll be featured in an upcoming post.
So says 5280, a Denver-based magazine about these nachos from Tocabe, a Denver American Indian restaurant.

The Medicine Wheel Nachos are based on four nacho commandments:
1. Nachos are a beautiful (and gluten-free) canvas
2. Make every chip count
3. Pile out, not up
4. Say cheese

Everything about these nachos sounds good.
